Healthy Mini Naan Pizzas

Ingredients

  • 2 mini whole wheat naans
  • 1/3 cup cooked chickpeas
  • 1/4 cup diced onion
  • Orange pepper (diced)
  • Handful of spinach
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 cup homemade hummus
  • 1 tablespoon balsamic vinegar
  • Cilantro

Preparation

  1. Heat naans in a pan or toaster oven

  2. Sauté veggies in a pan with a little coconut oil and garlic powder, adding the spinach in at the very end to cook just till it wilts slightly

  3. Assemble pizzas by spreading half the hummus on each naan, topping with sautéed veggies, sprinkling on paprika and cilantro, and drizzling balsamic vinegar over everything
