Fancy Avocado Toast with Kale and Tomato

Ingredients

  • sourdough bread or bread of choice
  • field tomato
  • ripe avocado
  • kale
  • Miyoko's Creamery mozzarella
  • balsamic vinegar

Preparation

  1. Toast the bread.

  2. In a pan, add a drizzle of olive oil, finely chopped kale, and thin tomato slices. Season with garlic salt, black pepper, and chili flakes. Cook until the tomato is crisp on each side and the kale is wilted.

  3. Spread avocado on the toasted bread, top with the kale and tomato mixture, add vegan mozzarella, and drizzle with balsamic vinegar.

  4. To save time, fry the kale and tomato while the bread is toasting.
