Single Serve Blueberry Crumble

Ingredients

  • 2 tbsp flour
  • 2 tbsp coconut sugar or brown sugar
  • 2 tbsp oats
  • 2 tsp neutral oil / melted vegan butter
  • dash of nutmeg and cinnamon
  • as many blueberries as you’d like (i used about 1/3 cup, frozen)
  • 1/2 tsp vanilla essence

Preparation

  1. Mix the oil, 1 tbsp of sugar, flour, vanilla and cinnamon until it forms clumps

  2. You can add a little water if you’d like if you want to make the clumps more defined

  3. In your desired ramekin, toss the blueberries in the remaining sugar and then cover with the crumble

  4. Bake at 180 degrees until the crumble is lightly golden

  5. Highly recommend to top with some ice cream!
