Smashed Baby Potatoes with Quick Green Pesto Drizzle
Ingredients
- Baby or new potatoes
- 1.5 tbsp avocado oil or coconut oil or ghee
- 1 tsp turmeric
- Pinch of black pepper
- Pink sea salt to taste
- 1 tsp super greens powder
- 1 tbsp olive oil
Preparation
Wash and cut baby or new potatoes in half
Toss them in a bowl with 1.5 tbsp avocado oil, 1 tsp turmeric, pinch of black pepper, and desired amount of pink sea salt
Transfer to a cast iron skillet or baking sheet and roast at 375 degrees for 35-40 minutes
Use a fork or the back of a spoon to smash the potatoes
Mix 1 tsp super greens powder with 1 tbsp olive oil to make pesto, then drizzle over the smashed potatoes
