Smashed Baby Potatoes with Quick Green Pesto Drizzle

Ingredients

  • Baby or new potatoes
  • 1.5 tbsp avocado oil or coconut oil or ghee
  • 1 tsp turmeric
  • Pinch of black pepper
  • Pink sea salt to taste
  • 1 tsp super greens powder
  • 1 tbsp olive oil

Preparation

  1. Wash and cut baby or new potatoes in half

  2. Toss them in a bowl with 1.5 tbsp avocado oil, 1 tsp turmeric, pinch of black pepper, and desired amount of pink sea salt

  3. Transfer to a cast iron skillet or baking sheet and roast at 375 degrees for 35-40 minutes

  4. Use a fork or the back of a spoon to smash the potatoes

  5. Mix 1 tsp super greens powder with 1 tbsp olive oil to make pesto, then drizzle over the smashed potatoes
