Soba Noodle Salad with Peanut Sauce

Ingredients

Soba noodle salad

  • 8 oz soba noodles
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1.5 cups shelled frozen edamame
  • 1 bell pepper, sliced
  • 1-2 green onions
  • handful of crushed peanuts
  • chopped cilantro
  • tofu (optional)

Peanut sauce

  • 1/2 cup creamy natural peanut butter
  • 2 tbsp tamari or soy sauce
  • 1.5-2 tbsp maple syrup
  • juice of one lime
  • 1.5 tbsp rice vinegar
  • 1-2 tsp sesame oil
  • 2-4 tbsp water to thin

Preparation

  1. Chop up your veggies.

  2. Cook your soba noodles according to package instructions. Add in the frozen edamame when the noodles are almost cooked to defrost them.

  3. Make the peanut sauce. Whisk all peanut sauce ingredients together until smooth and add water to thin to your desired consistency.

  4. Drain and rinse your soba noodles with cold water.

  5. Place soba noodles in a large bowl, add in veggies, toss with as much peanut sauce as you desire. Top with crushed peanuts, green onions, and chopped cilantro.

Notes

  1. Tofu can be added optionally for extra protein.

  2. Peanut sauce can be made in a larger batch and used in other dishes like pad Thai.
