Edamame Salad with Almond Butter Miso Dressing
Ingredients
Dressing
- 1/2 cup water
- 1/3 cup almond butter
- 1 tbsp miso
- 2 tbsp sesame oil
- ~1/2 inch piece of fresh ginger
- 1 tsp maple syrup
- juice from 1/2 lime
- salt/pepper to taste
Salad
- 2 cups cooked edamame
- 2–3 cups red cabbage – shredded (about 1/2 of a cabbage)
- 1 cup cooked quinoa
- 2 carrots – shredded or finely sliced
- 1 jalapeno – finely sliced with seeds removed (omit if sensitive to spice)
- 1 cup finely chopped cilantro
Preparation
In a blender, blend together all dressing ingredients until smooth.
Mix together all salad ingredients in a large bowl.
Pour dressing over salad and mix.
