Edamame Salad with Almond Butter Miso Dressing

Ingredients

Dressing

  • 1/2 cup water
  • 1/3 cup almond butter
  • 1 tbsp miso
  • 2 tbsp sesame oil
  • ~1/2 inch piece of fresh ginger
  • 1 tsp maple syrup
  • juice from 1/2 lime
  • salt/pepper to taste

Salad

  • 2 cups cooked edamame
  • 2–3 cups red cabbage – shredded (about 1/2 of a cabbage)
  • 1 cup cooked quinoa
  • 2 carrots – shredded or finely sliced
  • 1 jalapeno – finely sliced with seeds removed (omit if sensitive to spice)
  • 1 cup finely chopped cilantro

Preparation

  1. In a blender, blend together all dressing ingredients until smooth.

  2. Mix together all salad ingredients in a large bowl.

  3. Pour dressing over salad and mix.
