Super Easy Plant-Based Protein Pancakes

Ingredients

  • 2 flax or real eggs
  • 1 ripe banana
  • 1 tbsp coconut oil
  • 1 tsp maple syrup or monk fruit
  • 1/3 cup non dairy milk
  • 1 cup @bobsredmill paleo pancake mix
  • 3 tbsp @yoursuperfoods skinny protein
  • 1/4 cup blueberries
  • 1 tsp ground cinnamon

Preparation

  1. Mix all ingredients in a large bowl until batter forms.

  2. Spoon onto a lightly oiled skillet and flip after about 1-2 minutes.

  3. Stack and enjoy.
