Super Easy Veg Dinner

Ingredients

  • Sweet potato
  • Onion
  • Broccoli
  • Shiitakes
  • Celery
  • Carrots
  • Power greens
  • Cashews
  • Sriracha
  • Coconut aminos
  • Lime
  • Cilantro

Preparation

  1. Chop and steam one sweet potato for 10 min. Set aside

  2. Heat small amount of coconut oil in ceramic fry pan (can replace oil with broth or water) on med or med/high

  3. Sauté onion until fragrant. Add carrots and celery and broccoli. Sauté until slightly softened and bright in color. Add coconut aminos. Cook another minute or two

  4. Add in your greens and mix in. As they wilt a bit, add your steamed potatoes

  5. Once potatoes are warmed remove from heat

  6. Garnish with cashews, lime wedges, cilantro, and sriracha (optional)
