Thai Pad See Ew Stir-Fry

Ingredients

  • 8 oz rice noodles
  • firm tofu
  • broccoli
  • 2 cups cole slaw mix
  • 2 tsp avocado oil

Sauce

  • 2 Tbsp dark soy sauce
  • 2 Tbsp lime juice
  • 2 tsp unseasoned rice vinegar
  • 1 Tbsp maple syrup
  • 3 Tbsp water
  • 2 tsp cornstarch
  • 1 tsp garlic powder

Preparation

  1. Soak rice noodles in hot water for 15 minutes while preparing other ingredients.

  2. Mix sauce ingredients together until cornstarch is dissolved and set aside.

  3. Heat a pan and add 1 teaspoon avocado oil.

  4. Sauté broccoli and firm tofu for 3 to 5 minutes.

  5. Make a well in the middle of the pan and add another teaspoon of avocado oil.

  6. Add drained noodles and cole slaw mix.

  7. Pour in the sauce, stirring it before adding, and mix everything using tongs or a spoon.

  8. Cook for 5 minutes, occasionally flipping, until noodles are soft.

Tips

  1. Vary the vegetables and protein based on preference for creativity.

  2. Add Sriracha or other spices for heat if desired.
