Tofu Thai Green Curry with Brown Rice

Ingredients

  • onion
  • garlic
  • broccoli
  • sugar snap peas
  • baby corn
  • red pepper
  • edamame beans
  • curry paste
  • coconut cream
  • tofu
  • soy sauce
  • oil
  • basmati rice

Preparation

  1. Cook the basmati rice according to package instructions.

  2. Cut the tofu into triangles and coat with soy sauce.

  3. Fry the tofu in a little oil until golden brown.

  4. Sauté the onion and garlic in a pan until fragrant.

  5. Add the broccoli, sugar snap peas, baby corn, red pepper, and edamame beans, and cook until slightly softened.

  6. Stir in the curry paste and coconut cream, and heat through.

  7. Serve the curry with the cooked rice and fried tofu.
