Vegan Breakfast Burritos with Chorizo

Ingredients

  • Tortilla wraps
  • 3 potatoes
  • 150 g chorizo sausages (2 pieces)
  • 100 g mushrooms
  • A pinch of salt
  • A pinch of pepper
  • A pinch of chili powder

Optional toppings

  • Hummus
  • Tomatoes
  • Lettuce
  • Vegan cheese

Preparation

  1. Cut the potatoes into halves and boil until they are soft but not too soft, so they can be cut into smaller pieces without crumbling.

  2. Meanwhile, in a pan, fry the chopped sausages until golden.

  3. Add mushrooms and then the potatoes cut into smaller chunks.

  4. Add salt, pepper, chili powder, and fry everything for a few minutes until the potatoes have some color.

  5. Lay out a tortilla wrap.

  6. Add hummus in the bottom, then tomatoes and lettuce.

  7. On top, add the potato mixture and sprinkle some vegan cheese.

  8. Fold the wrap into a burrito shape.

  9. Fry the burrito on both sides in a pan until crispy.

  10. Cut into two pieces and enjoy.

Notes

  1. This recipe yields approximately 4 burritos.

  2. The chorizo sausages add spicy flavors, and all toppings are optional based on preference.
