Vegan Jerk-Spiced Lentil Stew

Ingredients

Jerk spice blend

  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tbsp smoked paprika
  • 1/4 tsp cayenne pepper
  • 2 tsp dry thyme
  • 2 tsp dry parsley
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp allspice
  • 1/2 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp pepper

Lentils

  • 1 cup dry lentils (I used black lentils)
  • 1/2 a red onion, diced
  • 1 red bell pepper, diced
  • 1 inch ginger, minced
  • 5 cloves garlic, minced
  • 1 15oz can of diced tomatoes
  • 1 1/2 tbsp jerk seasoning
  • 2 tsp brown mustard
  • 2 tsp maple syrup
  • 3 cups mushroom or vegetable broth
  • Juice of 1/2 a lime
  • Zest of one lime

Preparation

  1. Combine all jerk spice blend ingredients in a jar and mix well before using.

  2. In a medium pot, sauté diced red onion until softened.

  3. Add minced ginger, minced garlic, and diced red bell pepper, and sauté until fragrant.

  4. Add dry lentils, diced tomatoes, 1.5 tablespoons of jerk seasoning, brown mustard, and maple syrup, then stir to combine.

  5. Add mushroom or vegetable broth, bring to a boil, and reduce to a simmer.

  6. Cover and cook for 25 minutes or until most liquid is absorbed by lentils.

  7. Add lime zest and lime juice, stir, and remove from heat to serve.
