Vegan Scrambled Eggs

Ingredients

  • 1x pack of organic silken tofu (i like the coles brand) or firm tofu depending on desired consistency (firm will be less 'egg' like) you want about 200g
  • 3 tbsp nutritional yeast
  • 1 tsp turmeric
  • 1 tbsp dijon mustard
  • 1/2 tsp garlic powder, paprika & onion powder
  • 1/3 cup of milk of your choice - i use almond
  • some vegan butter for frying

Preparation

  1. Grab your tofu and mash it in a bowl leaving chunks - don't mash too much especially if you're using silken as that will break away as you cook it

  2. Chunks are good at this point

  3. Combine all your other ingredients apart from your butter, in a bowl and mix together to make a sauce

  4. Set aside

  5. Get the fry pan hot and pop your butter in adding in the tofu too brown

  6. Fold it instead of mix it so you don't break it up *too much*

  7. Once browned add your sauce and stir until it's reached your desired consistency! serve with your choice of sides and some salt and pepper

  8. This recipe serves 2 lads
