Hearty Vegetable Quinoa Soup

Ingredients

  • Cooked quinoa
  • White beans
  • Pumpkin purée
  • Carrots
  • Celery
  • Onion
  • Garlic
  • Yellow squash
  • Broccoli
  • Fresh sage
  • Fresh thyme
  • Parsley
  • Bay leaves
  • Hickory smoke
  • Vegetable broth
  • Fresh greens
  • Nutritional yeast

Preparation

  1. In a large pot, sauté chopped onion and garlic until fragrant and softened.

  2. Add carrots, celery, yellow squash, and broccoli, and cook for a few minutes until slightly tender.

  3. Stir in vegetable broth, cooked quinoa, white beans, pumpkin purée, fresh sage, thyme, parsley, bay leaves, and hickory smoke. Bring to a boil.

  4. Reduce heat and simmer for 20-30 minutes until vegetables are tender and flavors meld.

  5. Just before serving, wilt in fresh greens and stir in nutritional yeast to taste.
