Hearty Vegetable Quinoa Soup
Ingredients
- Cooked quinoa
- White beans
- Pumpkin purée
- Carrots
- Celery
- Onion
- Garlic
- Yellow squash
- Broccoli
- Fresh sage
- Fresh thyme
- Parsley
- Bay leaves
- Hickory smoke
- Vegetable broth
- Fresh greens
- Nutritional yeast
Preparation
In a large pot, sauté chopped onion and garlic until fragrant and softened.
Add carrots, celery, yellow squash, and broccoli, and cook for a few minutes until slightly tender.
Stir in vegetable broth, cooked quinoa, white beans, pumpkin purée, fresh sage, thyme, parsley, bay leaves, and hickory smoke. Bring to a boil.
Reduce heat and simmer for 20-30 minutes until vegetables are tender and flavors meld.
Just before serving, wilt in fresh greens and stir in nutritional yeast to taste.
