A S P a R a G U S Goat Cheese, Toasted Almond Salad

Ingredients

  • 1/2 cup almonds
  • asparagus & 1 shallot
  • olive oil
  • red wine vinegar
  • salt & pepper
  • goat cheese

Preparation

  1. Trim & chop asparagus into 1 inch pieces; add to a pot of boiling water & cook for 2-3 mins; place into ice water to stop the cooking process; drain & dry; slice 1/2 cup almonds & toast in a frying pan {watch carefully as it can burn easily}; combine asparagus & 1 shallot finely diced, top with toasted almonds & drizzle with olive oil, red wine vinegar, salt & pepper; top with lots of yummy goat cheese ?
