Adzuki Bean Salad with Spicy Ginger Dressing
Ingredients
- 1 small red onion (peeled and thinly sliced into rounds)
- 2 cups cooked adzuki beans
- 1 cup sugar snap peas (sliced in half lengthways)
- 80ml olive oil
- 2 large cloves garlic (peeled and thinly sliced)
- 1 red chilli (trimmed and thinly sliced)
- 3cm piece ginger (peeled and julienned)
- 2 tsp black mustard seeds
- 1 tsp cumin seeds
- 1 tsp fennel seeds
- 1 lime (zest shaved off in one strip)
- Salt
- 1 cup fresh coriander leaves (chopped)
Dressing
- 1 cup tamari sauce
- 1 garlic clove (minced)
- 2 tablespoons fresh ginger (grated)
- 2 teaspoons sesame oil
- 1 teaspoon chilli oil
- 1/3 cup fresh lime juice
- 1/4 cup rice vinegar
- 1/4 teaspoon onion powder
Preparation
Combine the dressing ingredients in a blender and process until smooth.
Place the cooked adzuki beans in a large bowl.
Add the oil, garlic, chilli, ginger, seeds, and lime zest to a pan.
Put the pan on a medium-high heat and cook for four to five minutes, stirring occasionally, until the garlic is golden brown.
Discard the lime zest and pour everything else over the adzuki beans.
Add the red onion, sugar snaps, coriander and dressing.
Give it a gentle stir and serve.
