Easy Vegan Watermelon Poke Bowl

Ingredients

  • 3 cups watermelon, cubed into 1/2" pieces
  • 1/4th cup soy sauce
  • 2 teaspoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tbsp fresh lime juice
  • 1 tablespoon maple syrup
  • 2 scallions, minced
  • 2 tablespoons fresh ginger, minced
  • 1 cloves garlic, minced
  • 2 tablespoons white sesame seeds

Preparation

  1. Mix all ingredients in a large bowl, adding the cubed watermelon last. Gently toss to combine and cover all pieces.

  2. Seal and store in the refrigerator for at least 30 minutes before serving. Longer the better!

  3. Once marinated build your bowl using edamame, avocado, carrot, cucumber, nori and a bit of spicy mayo.
