Asparagus Goat Cheese and Toasted Almond Salad
Ingredients
- asparagus
- 1/2 cup almonds
- 1 shallot
- olive oil
- red wine vinegar
- salt
- pepper
- goat cheese
Preparation
Trim and chop asparagus into 1-inch pieces
Add to a pot of boiling water and cook for 2-3 minutes
Place into ice water to stop the cooking process
Drain and dry
Slice 1/2 cup almonds and toast in a frying pan, watching carefully to avoid burning
Combine asparagus and 1 finely diced shallot
Top with toasted almonds and drizzle with olive oil, red wine vinegar, salt, and pepper
Top with goat cheese
