Asparagus Goat Cheese and Toasted Almond Salad

Ingredients

  • asparagus
  • 1/2 cup almonds
  • 1 shallot
  • olive oil
  • red wine vinegar
  • salt
  • pepper
  • goat cheese

Preparation

  1. Trim and chop asparagus into 1-inch pieces

  2. Add to a pot of boiling water and cook for 2-3 minutes

  3. Place into ice water to stop the cooking process

  4. Drain and dry

  5. Slice 1/2 cup almonds and toast in a frying pan, watching carefully to avoid burning

  6. Combine asparagus and 1 finely diced shallot

  7. Top with toasted almonds and drizzle with olive oil, red wine vinegar, salt, and pepper

  8. Top with goat cheese
