Colorful Lentil and Vegetable Salad

Ingredients

  • 1 cup black lentils
  • 1 large sweet potato
  • 5 oz container of wild greens
  • 4 stems of kale
  • 3 tomatoes
  • 1 large zucchini
  • 1 cucumber
  • 1 yellow pepper
  • 1 red pepper
  • juice of one large lemon

Preparation

  1. Dice and roast the sweet potato.

  2. Chop the kale, tomatoes, zucchini, cucumber, yellow pepper, and red pepper.

  3. Toss all ingredients together with the lemon juice.

  4. Set aside approximately 45 minutes for preparation.
