Summer Watermelon Salad with Mint and Basil

Ingredients

  • 2 cups Watermelon, Cubed or made into balls
  • 3 Baby Radish or regular radish Finely sliced (optional)
  • 1/2 a Cucumber, Quartered and sliced
  • 20 Mint leaves, Torn roughly
  • 20 Basil Leaves, Torn roughly
  • 1 Spring onion, finely sliced
  • 3 Tablespoons Roasted peanuts, crushed
  • Zest of 1 lemon (optional)

Dressing

  • 1 Tablespoon Rice vinegar/white vinegar
  • 1 Tablespoon Soy sauce
  • 1/2 Teaspoon Sriracha/ any other Hot sauce
  • 1/4th Teaspoon Grated ginger
  • 2 Teaspoons Coriander Stems, chopped finely
  • 1 Tablespoons Lime Juice
  • 1/4 th Teaspoon Pepper powder
  • Salt to taste

Preparation

  1. Refrigerate the watermelon for at least an hour ahead of preparing the salad.

  2. In a large bowl gently combine all the salad ingredients except the Lime Zest and the peanuts.

  3. In another small mixing bowl add all the ingredients for the dressing and mix well.

  4. Pour the dressing over the salad and top it with crushed peanuts and the lime zest.
