Refreshing Vegan Cauliflower Ceviche Dish

Ingredients

  • 1/4 head of Cauliflower
  • 1 Avocado
  • 1/2 Red Onion
  • 1/4 cup Cilantro
  • 1/2 Jalapeno
  • 2 Limes
  • Himalayan pink salt to taste
  • Cayenne to taste
  • Pepper to taste

Preparation

  1. Finely chop the cauliflower.

  2. Cut the avocado into cubes.

  3. Chop the red onion.

  4. Break apart cilantro into small pieces with hands.

  5. Chop the jalapeno.

  6. Squeeze the limes fresh.

  7. Mix all ingredients together.

  8. Add Himalayan pink salt, cayenne, and pepper to taste.

  9. Serve with thinly sliced jicama chips, other veggie chips, or your choice of baked chips.
