Miso shitake soup
Ingredients
- 2tb miso
- 15 shiitake mushrooms
- Handful parsley
- Handful cilantro
- 2tb soy sauce
- 1tb agave syrup
- 1tb vegetable stock
- 1 carrot
- 1/2 onion
- 1 thumb big piece of ginger
- 1lime
- Sesame seeds
Preparation
Slice shiitake in half
Chop parsley and cilanto
Chop the onion and ginger in small pieces
Heat up oil in a pot
Glaze the onion and ginger
Add 1 liter of water and the vegetable broth
Slice up the carrots in small stripes, add to the pot
Mix in the shiitake
Add miso, soy sauce and agave tot he pot
Cook for a couple of minutes
Mix in parsley and half oft he cilantro
In a pan without oil, fry the sesame seeds
Serve soup with lime, sesame seeds and the rest of the cilantro
