Miso shitake soup

Ingredients

  • 2tb miso⁣
  • 15 shiitake mushrooms⁣
  • Handful parsley⁣
  • Handful cilantro⁣
  • 2tb soy sauce⁣
  • 1tb agave syrup⁣
  • 1tb vegetable stock⁣
  • 1 carrot⁣
  • 1/2 onion⁣
  • 1 thumb big piece of ginger⁣
  • 1lime⁣
  • Sesame seeds⁣

Preparation

  1. Slice shiitake in half⁣

  2. Chop parsley and cilanto⁣

  3. Chop the onion and ginger in small pieces⁣

  4. Heat up oil in a pot⁣

  5. Glaze the onion and ginger⁣

  6. Add 1 liter of water and the vegetable broth⁣

  7. Slice up the carrots in small stripes, add to the pot⁣

  8. Mix in the shiitake⁣

  9. Add miso, soy sauce and agave tot he pot⁣

  10. Cook for a couple of minutes⁣

  11. Mix in parsley and half oft he cilantro⁣

  12. In a pan without oil, fry the sesame seeds⁣

  13. Serve soup with lime, sesame seeds and the rest of the cilantro⁣
