Roasted T O M a T O & Basil Soup

Ingredients

  • 12-14 roma tomatoes
  • 8 garlic cloves
  • 8-10 basil leaves
  • 1.5-2 cups broth
  • 1/2 cup almond milk
  • 1 large onion
  • 1 tbsp @earthbalance vegan butter
  • salt, pepper & chili flakes

Preparation

  1. Preheat oven to 400

  2. Slice tomatoes lengthwise & peel garlic, toss in olive oil & generously season with salt & pepper

  3. Bake for 45 mins

  4. Meanwhile slice onion & slow cook with a drizzle of oil & @earthbalance for 10-15 mins stirring often

  5. Add tomatoes, garlic, basil & onion into a blender or food processor & blend until smooth

  6. Return to pot & add broth + almond milk; simmer for 10 mins

  7. Season & serve with grilled cheese or yummy sourdough toast
