Ingredients

  • * 800g Sauerkraut
  • * 250g Potatoes
  • * 150g Tofu
  • * 1 Onion
  • * 1/2 tsp. Caraway seeds
  • * few Bay Leaves
  • * Olive Oil
  • * 1 Tbsp. Smoked Paprika
  • * 1 Tbsp. Flour
  • * 1 tsp. Salt
  • * pinch of Black Pepper

Preparation

  1. Add the sauerkraut into a big pot using all the liquids too. Add few bay leaves and water just to cover the sauerkraut. Bring it to boil. Cover the pot and simmer for about 30 minutes on a medium heat

  2. Cut the potatoes into small and cook them in another pot with cumin. Don't overcook them. They should be almost soft

  3. In a meantime cut the onion and tofu into small pieces. Preheat a non-stick skillet on a medium high heat. Add olive oil and tofu. Fry the tofu for a while. When the tofu starts to get a little brown add the onion and simmer for few more minutes. Lower the heat to minimum. Add the smoked paprika and 1 tablespoon flour. Stir constantly till combined

  4. After 30 minutes of cooking the sauerkraut add the potatoes into the pot with sauerkraut using the water from potatoes as well. Add the Tofu and stir everything

  5. Add a pinch of black pepper, salt and simmer for the last few minutes (7-10). Taste and add more salt if needed

  6. Enjoy the soup with home made bread
