Beautiful Cashew Cheesecake

Ingredients

  • Base⠀
  • 2/3 cup almond meal⠀
  • 1/3 cup coconut flour⠀
  • 2tbs coconut oil (melted)⠀
  • 2tbs rice malt syrup⠀
  • Filling ⠀
  • 1 cup cashews (soaked 30 mins in boiling water or overnight) then rinsed and drained⠀
  • 100g frozen blueberries⠀
  • 1/2 coconut cream or milk⠀
  • 30ml coconut oil⠀
  • 1tsp vanilla extract⠀
  • 1/3 cup natural sweetener (Stevia, maple syrup, coconut sugar)⠀
  • Juice of 1 lemon⠀
  • 1/4tsp salt⠀
  • Granola⠀
  • 3/4 cup quick oats⠀
  • 1tbs coconut oil⠀
  • 1tbs maple or date syrup⠀

Preparation

  1. Mix in a bowl and press into a lined tin or silicon moulds⠀

  2. Blend all ingredients in a blender until smooth and spoon over base. Place in the freezer while you prepare the granola

  3. Stir in a fry pan over medium heat for 5 mins. Spoon over filling and press down lightly.⠀

  4. Chill cheesecake overnight. Can be stored and eaten from freezer. Thaw a few minutes prior to consuming
