Beautiful Cashew Cheesecake
Ingredients
- Base⠀
- 2/3 cup almond meal⠀
- 1/3 cup coconut flour⠀
- 2tbs coconut oil (melted)⠀
- 2tbs rice malt syrup⠀
- Filling ⠀
- 1 cup cashews (soaked 30 mins in boiling water or overnight) then rinsed and drained⠀
- 100g frozen blueberries⠀
- 1/2 coconut cream or milk⠀
- 30ml coconut oil⠀
- 1tsp vanilla extract⠀
- 1/3 cup natural sweetener (Stevia, maple syrup, coconut sugar)⠀
- Juice of 1 lemon⠀
- 1/4tsp salt⠀
- Granola⠀
- 3/4 cup quick oats⠀
- 1tbs coconut oil⠀
- 1tbs maple or date syrup⠀
Preparation
Mix in a bowl and press into a lined tin or silicon moulds⠀
Blend all ingredients in a blender until smooth and spoon over base. Place in the freezer while you prepare the granola
Stir in a fry pan over medium heat for 5 mins. Spoon over filling and press down lightly.⠀
Chill cheesecake overnight. Can be stored and eaten from freezer. Thaw a few minutes prior to consuming
