Blueberry & Lemon Breakfast ‘Cheesecake
Ingredients
- /3 cup oats, blended
- ✨ 1 cup liquid (i used a mix of milk & water)
- ✨ 2 tbsp sweetener (sugar/maple/anything)
- ✨ 1/2 tsp vanilla
- ✨ lemon juice (of about 1/2 a lemon)
- ✨ lemon zest (of about 1 lemon)
- vegan cream cheese
- ✨ dash of maple syrup
- ✨ tiny splash of almond milk
Preparation
Cook on hob until thick and liquid is absorbed
Tir into the oats
Pour into a bowl
Place in bowl in fridge overnight
N the morning, whip the above ingredients
Carefully remove the oats from the bowl by running a knife round the edges and tipping it upside down
Ice on outside of cake with the frosting
Sprinkle lemon zest on top & enjoy
