Blueberry & Lemon Breakfast ‘Cheesecake

Ingredients

  • /3 cup oats, blended
  • ✨ 1 cup liquid (i used a mix of milk & water)
  • ✨ 2 tbsp sweetener (sugar/maple/anything)
  • ✨ 1/2 tsp vanilla
  • ✨ lemon juice (of about 1/2 a lemon)
  • ✨ lemon zest (of about 1 lemon)
  • vegan cream cheese
  • ✨ dash of maple syrup
  • ✨ tiny splash of almond milk

Preparation

  1. Cook on hob until thick and liquid is absorbed

  2. Tir into the oats

  3. Pour into a bowl

  4. Place in bowl in fridge overnight

  5. N the morning, whip the above ingredients

  6. Carefully remove the oats from the bowl by running a knife round the edges and tipping it upside down

  7. Ice on outside of cake with the frosting

  8. Sprinkle lemon zest on top & enjoy
