Chocolate Sweet Potato Cups

Ingredients

  • 1/4 cup sweet potato purée (just bake/steam a sweet potato then mash it up) ⁣⠀⁠⠀
  • 1/2 scoop vanilla protein @missfitsnutrition (Eli5 for £5 off)⁣⠀⁠⠀
  • 1 tbsp maple syrup⁣⠀⁠⠀
  • 1/2 cup (75g) dark chocolate⁣⠀⁠⠀
  • 1 heaped tbsp coconut oil⁣⠀⁠⠀

Preparation

  1. Melt the chocolate over a low heat with the coconut oil, stirring consistently.⁣⠀⁠⠀

  2. Pour half the chocolate into the base of 4 cupcake liners, evenly distributing each one. Place in the freezer for 5 mins.⁣⠀⁠⠀

  3. Mix together the sweet potato purée, vanilla protein and maple syrup until fully combined. ⁣⠀⁠⠀

  4. Remove the chocolate cupcake cases from the freezer and divide the sweet potato mixture over each one.⁣⠀⁠⠀

  5. Pour the remaining chocolate over the top, return to freezer for 10-15 mins to set before serving. Then store in the fridge.⁣⠀⁠⠀
