Chocolate Sweet Potato Cups
Ingredients
- 1/4 cup sweet potato purée
- 1/2 scoop vanilla protein
- 1 tbsp maple syrup
- 1/2 cup dark chocolate
- 1 heaped tbsp coconut oil
Preparation
Melt the chocolate over a low heat with the coconut oil, stirring consistently.
Pour half the chocolate into the base of 4 cupcake liners, evenly distributing each one, and place in the freezer for 5 minutes.
Mix together the sweet potato purée, vanilla protein and maple syrup until fully combined.
Remove the chocolate cupcake cases from the freezer and divide the sweet potato mixture over each one.
Pour the remaining chocolate over the top, return to freezer for 10-15 minutes to set before serving, and then store in the fridge.
