Chocolate Sweet Potato Cups
Ingredients
- 1/4 cup sweet potato purée (just bake/steam a sweet potato then mash it up) ⠀⠀
- 1/2 scoop vanilla protein @missfitsnutrition (Eli5 for £5 off)⠀⠀
- 1 tbsp maple syrup⠀⠀
- 1/2 cup (75g) dark chocolate⠀⠀
- 1 heaped tbsp coconut oil⠀⠀
Preparation
Melt the chocolate over a low heat with the coconut oil, stirring consistently.⠀⠀
Pour half the chocolate into the base of 4 cupcake liners, evenly distributing each one. Place in the freezer for 5 mins.⠀⠀
Mix together the sweet potato purée, vanilla protein and maple syrup until fully combined. ⠀⠀
Remove the chocolate cupcake cases from the freezer and divide the sweet potato mixture over each one.⠀⠀
Pour the remaining chocolate over the top, return to freezer for 10-15 mins to set before serving. Then store in the fridge.⠀⠀
