Creamy No-Bake Chocolate Cheesecake

Ingredients

Crust

  • 125 g butter
  • 200 g chocolate chip cookies

Chocolate cream

  • 100 g dark chocolate
  • 200 g cream cheese
  • 500 g mascarpone
  • 70 g powdered sugar
  • 5 tsp cocoa powder

Decoration

  • 1 tbsp cocoa powder, for dusting
  • 100 g dark chocolate

Preparation

  1. Melt butter in a pot

  2. Place chocolate chip cookies in a zip-top freezer bag

  3. Seal the bag and roll with a rolling pin until cookies are finely crushed

  4. Mix cookie crumbs with melted butter

  5. Transfer mixture to a 26 cm springform pan and smooth with a spoon (don't worry if mixture is slightly liquid; it will set when chilled)

  6. Chill in freezer for 10 minutes or refrigerator for at least 30 minutes

  7. Melt dark chocolate in a double boiler and let cool until still liquid

  8. Whip together cream cheese, mascarpone, powdered sugar, and cocoa powder

  9. Fold in melted chocolate until homogeneous

  10. Pour chocolate cream over crust in springform pan and smooth the top

  11. Scrape dark chocolate bar with a knife to create curls

  12. Sift cocoa powder over the cake

  13. Decorate with chocolate curls

  14. Refrigerate cake for at least 2 hours before removing springform ring
