Raw Vegan Avocado Lime Pie

Ingredients

  • 12 dates (pits removed, soak in hot water 10min)
  • 1 tsp cinnamon
  • 1 cup unsalted macadamia nuts
  • 1 cup unsalted cashews
  • 1 tsp vanilla
  • 1/2 cup shredded coconut
  • 1/4 cup melted coconut oil

Preparation

  1. Grease 8 inch pie pan and place baking paper on the bottom

  2. Combine crust ingredients in a food processor. Press into pan, allow to chill in fridge while you make the filling

  3. For the pie filing: 1/2 can (200ml) coconut milk, full fat, 2 avocados, 1/2 cup maple syrup, 1/3 cup lime juice, 3/4 cup melted coconut oil, 1 tsp vanilla, 2 handfuls of spinach (add more if desired), zest from 2 limes

  4. Add all filling ingredients into food processor, blend until smooth. May take a few minutes to grind up

  5. Pour over chilled crust. Set in fridge to firm up for 1hr to 2hrs. It firms quick
