Refreshing Buttermilk Cream with Strawberry Topping

Ingredients

Cream

  • 500 g buttermilk
  • 3 tablespoons lemon juice
  • 100 g powdered sugar
  • 6 sheets gelatin
  • 250 g heavy cream

Strawberry topping

  • 300 g strawberries (or raspberries as substitute)
  • 1 tablespoon sugar
  • 1 tablespoon chopped pistachios (optional)

Preparation

  1. Mix buttermilk, lemon juice, and powdered sugar in a bowl until smooth. Soak gelatin according to package instructions. Take 2-3 tablespoons of the cream mixture and put in a small pot. Squeeze out the gelatin and add to the pot. Heat while stirring constantly until the gelatin is completely dissolved (do not boil!). Mix the warm gelatin mixture back into the cream. Chill the bowl for 30 minutes

  2. Pour heavy cream into a tall mixing bowl and whip until stiff. Gently fold the whipped cream into the setting cream. Divide the dessert into 6 glasses (250 ml each) and chill for at least 60 minutes

  3. Wash strawberries, pat dry, and remove the green tops. Puree the strawberries and sugar with an immersion blender. Strain the puree through a coarse sieve. Just before serving, spread the fruit puree over the glasses

Notes

  1. The dessert keeps in the refrigerator for about 2 days
