Vegan Cranberry Pistachio Energy Balls with Homemade White Chocolate Drizzle

Ingredients

  • 1.5 cups cranberry pistachio oatmeal blend
  • 3 tablespoons tahini
  • 1/4 cup almond butter
  • 1/4 cup maple syrup
  • 1 vegan egg replacement
  • White chocolate for drizzling (you can melt down a bar or make your own)

Preparation

  1. In a mixing bowl, combine the cranberry pistachio oatmeal blend, tahini, almond butter, maple syrup, and vegan egg replacement.

  2. Mix the ingredients until well combined. If the mixture seems too wet or dry, you can adjust the consistency by adding more oatmeal blend or tahini as needed.

  3. Form the mixture into small balls and place them on a parchment-lined tray.

  4. Melt the white chocolate either by microwaving it in short intervals or using a double boiler method.

  5. Drizzle the melted white chocolate over the energy balls.

  6. Place the tray in the fridge to allow the white chocolate to set.

  7. Once the chocolate is set, the energy balls are ready to enjoy!
