Classic Spicy Texas Chili
Ingredients
- 3 Tbsp olive oil
- 24 oz meat-free ground beef
- 1 large onion, thinly sliced
- 1 large red pepper, thinly sliced
- 1 jalapeno, de-seeded and finely diced
- 1 Tbsp minced garlic
- 1 tsp salt and black pepper
- 2 Tbsp cumin
- 1 Tbsp smoked paprika
- 1 tsp oregano
- 1 tsp coriander
- 1 tsp chipotle chili powder
- 1/4 tsp cayenne powder, or to desired spiciness
- 1 Tbsp tomato paste
- 1 chipotle pepper in adobo sauce, chopped
- 8 oz tomato sauce
- 1 cup vegetable broth
Preparation
In a large pan over medium-high heat, add oil. Once heated, add meat-free ground beef and cook until browned, about 3-5 minutes.
Add onions, garlic, red pepper, and jalapeno, then combine and cook until sautéed, about another 3-4 minutes.
Add spices, tomato paste, and chipotle, combine and cook for 1-2 minutes. Then add tomato sauce and vegetable broth, and stir until well combined.
Reduce heat to low, cover, and let simmer for about 12-15 minutes to build flavor.
Serve hot with optional toppings such as chopped spring onion and dairy-free Mexican-style cheese.
