Classic Spicy Texas Chili

Ingredients

  • 3 Tbsp olive oil
  • 24 oz meat-free ground beef
  • 1 large onion, thinly sliced
  • 1 large red pepper, thinly sliced
  • 1 jalapeno, de-seeded and finely diced
  • 1 Tbsp minced garlic
  • 1 tsp salt and black pepper
  • 2 Tbsp cumin
  • 1 Tbsp smoked paprika
  • 1 tsp oregano
  • 1 tsp coriander
  • 1 tsp chipotle chili powder
  • 1/4 tsp cayenne powder, or to desired spiciness
  • 1 Tbsp tomato paste
  • 1 chipotle pepper in adobo sauce, chopped
  • 8 oz tomato sauce
  • 1 cup vegetable broth

Preparation

  1. In a large pan over medium-high heat, add oil. Once heated, add meat-free ground beef and cook until browned, about 3-5 minutes.

  2. Add onions, garlic, red pepper, and jalapeno, then combine and cook until sautéed, about another 3-4 minutes.

  3. Add spices, tomato paste, and chipotle, combine and cook for 1-2 minutes. Then add tomato sauce and vegetable broth, and stir until well combined.

  4. Reduce heat to low, cover, and let simmer for about 12-15 minutes to build flavor.

  5. Serve hot with optional toppings such as chopped spring onion and dairy-free Mexican-style cheese.
