One Pot Creamy Spicy Rigatoni

Ingredients

  • 1 lb rigatoni
  • 6 oz tomato paste
  • 1 cup milk (of choice)
  • 2 1/2 cups water
  • 3 tbsp butter
  • 1 large shallot
  • 3-4 cloves garlic
  • 1 tsp red pepper flakes

Preparation

  1. Heat a dash of oil in a large pot or dutch oven over medium heat.

  2. Add diced shallot and minced garlic; sauté for 1-2 minutes.

  3. Mix in tomato paste and butter.

  4. Add water, milk, red pepper flakes, and uncooked pasta.

  5. Bring to a boil.

  6. Reduce heat to medium-low and cook uncovered for about 15 minutes, stirring frequently to prevent pasta from sticking to the bottom.

  7. If necessary, add 1/2 cup more water during cooking.
