One Pot Creamy Spicy Rigatoni
Ingredients
- 1 lb rigatoni
- 6 oz tomato paste
- 1 cup milk (of choice)
- 2 1/2 cups water
- 3 tbsp butter
- 1 large shallot
- 3-4 cloves garlic
- 1 tsp red pepper flakes
Preparation
Heat a dash of oil in a large pot or dutch oven over medium heat.
Add diced shallot and minced garlic; sauté for 1-2 minutes.
Mix in tomato paste and butter.
Add water, milk, red pepper flakes, and uncooked pasta.
Bring to a boil.
Reduce heat to medium-low and cook uncovered for about 15 minutes, stirring frequently to prevent pasta from sticking to the bottom.
If necessary, add 1/2 cup more water during cooking.
