Simple Garlic and Oil Pasta

Ingredients

  • 454g spaghetti
  • 6 garlic cloves finely chopped
  • 1/2 cup extra virgin olive oil
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tbsp red pepper chili flakes
  • 1/4 cup pasta water
  • Juice from half of a lemon
  • 1/4 cup finely chopped parsley leaves

Preparation

  1. Cook pasta until 1 minute shy of al dente, reserve 1/4 cup pasta water, and drain.

  2. In a large pan or skillet, heat olive oil over low heat.

  3. Add garlic and chili flakes; cook until garlic is lightly browned and no longer raw, then add salt and pepper and stir.

  4. Add the cooked pasta, reserved pasta water, parsley, and lemon juice; mix until well combined.

  5. Turn off the heat and serve immediately.

Tips

  1. Taste and add more salt, black pepper, or chili flakes if needed.
