Simple Garlic and Oil Pasta
Ingredients
- 454g spaghetti
- 6 garlic cloves finely chopped
- 1/2 cup extra virgin olive oil
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/2 tbsp red pepper chili flakes
- 1/4 cup pasta water
- Juice from half of a lemon
- 1/4 cup finely chopped parsley leaves
Preparation
Cook pasta until 1 minute shy of al dente, reserve 1/4 cup pasta water, and drain.
In a large pan or skillet, heat olive oil over low heat.
Add garlic and chili flakes; cook until garlic is lightly browned and no longer raw, then add salt and pepper and stir.
Add the cooked pasta, reserved pasta water, parsley, and lemon juice; mix until well combined.
Turn off the heat and serve immediately.
Tips
Taste and add more salt, black pepper, or chili flakes if needed.
