Vegan Ginger Miso Soup

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp grated ginger
  • 4 cups vegetable broth
  • 2 tbsp white miso paste
  • 1 cup sliced mushrooms
  • 1 cup chopped bok choy
  • 2 green onions, sliced
  • 1 tsp sesame oil
  • 1 tsp soy sauce

Preparation

  1. Heat olive oil in a pot over medium heat

  2. Sauté diced onion until softened

  3. Add minced garlic and grated ginger, cook until fragrant

  4. Pour in vegetable broth and bring to a simmer

  5. Add sliced mushrooms and simmer until tender

  6. Remove the pot from heat

  7. Whisk miso paste with a small amount of hot broth until smooth

  8. Stir the miso mixture back into the pot

  9. Add chopped bok choy and cook until slightly wilted

  10. Stir in sliced green onions, sesame oil, and soy sauce

  11. Serve immediately
