Creamy Vegan Butternut Squash Soup

Ingredients

  • 1 butternut squash
  • 1 onion
  • 2 cloves of garlic
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground cinnamon
  • salt and pepper to taste

Preparation

  1. Peel and cube the butternut squash

  2. Heat olive oil in a large pot over medium heat

  3. Add onion and garlic and sauté until softened

  4. Add butternut squash, vegetable broth, cinnamon, salt and pepper

  5. Bring to a boil then reduce heat and simmer until squash is tender

  6. Blend the soup until smooth using an immersion blender

  7. Stir in coconut milk and heat through without boiling

  8. Adjust seasoning and serve
