Protein-Packed Breakfast with Collagen Pancakes
Ingredients
Pancake batter
- Kodiak Cakes pancake mix
- 1/2 cup unsweetened cashew milk
- 1 egg white
- 1 scoop Further Food collagen
Toppings
- Blueberries
- Aldi USA organic peanut butter
- Strawberries
Egg mixture
- 2 organic brown eggs
- 1 scoop Siggi's dairy plain yogurt
Preparation
Mix collagen into the pancake mix
Combine pancake batter with cashew milk and egg white to form a smooth mixture
Cook the batter on a preheated griddle or pan until golden brown on both sides
Mix eggs with plain yogurt in a bowl
Cook the egg mixture in a pan over medium heat until fully set
Top the pancakes with blueberries, peanut butter, and strawberries before serving
