Protein-Packed Breakfast with Collagen Pancakes

Ingredients

Pancake batter

  • Kodiak Cakes pancake mix
  • 1/2 cup unsweetened cashew milk
  • 1 egg white
  • 1 scoop Further Food collagen

Toppings

  • Blueberries
  • Aldi USA organic peanut butter
  • Strawberries

Egg mixture

  • 2 organic brown eggs
  • 1 scoop Siggi's dairy plain yogurt

Preparation

  1. Mix collagen into the pancake mix

  2. Combine pancake batter with cashew milk and egg white to form a smooth mixture

  3. Cook the batter on a preheated griddle or pan until golden brown on both sides

  4. Mix eggs with plain yogurt in a bowl

  5. Cook the egg mixture in a pan over medium heat until fully set

  6. Top the pancakes with blueberries, peanut butter, and strawberries before serving
