Quick and Delicious Vegetable Stir Fried Noodles
Ingredients
- 370g egg noodles
- 1 small piece of ginger, grated
- 3 cloves of garlic, grated
- 3 red chillies, finely chopped
- 2 tbsp oil
- A small bowlful of frozen mixed vegetables
- 1 onion, roughly chopped
- 200g beansprouts
- 3 tbsp soy sauce
- 1/2 tbsp fish sauce (omit for vegetarian version)
- 1 tbsp oyster sauce (omit for vegetarian version)
- 2 spring onions
Preparation
Boil the egg noodles according to the manufacturer's instructions, ensuring they're not overcooked (about 4-5 minutes once the water is boiling).
Prepare the ginger, garlic, chillies, onion, and spring onion. If using fresh vegetables, slice them as well.
Heat 2 tbsp of oil in a wok on high heat. Add the grated ginger, garlic, and chillies, and fry until lightly golden (about 1 minute).
Add the frozen mixed vegetables to the wok and cook for 3-4 minutes. If using fresh vegetables, add them at this point along with the onion and beansprouts, and sauté for 2-3 minutes.
Add the cooked egg noodles to the wok and immediately add the soy sauce, fish sauce, and oyster sauce (if using). Stir-fry for an additional minute.
Garnish with chopped spring onions and serve the vegetable stir-fried noodles immediately. Enjoy!
