Quick Chocolate Mug Cake

Ingredients

  • 1/4 cup (37g) gluten-free flour (or all-purpose)
  • 2 tbsp (10g) cocoa powder
  • 1/8 tsp salt
  • 1/2 tsp baking powder
  • 3 tbsp (20g) coconut sugar
  • 4 tbsp (60g) almond milk
  • 2 tbsp (32g) nut or seed butter (chocolate recommended, e.g., Sunbutter)
  • 1/4 tsp vanilla extract
  • 1 tbsp (15g) chocolate chips

Preparation

  1. Whisk the dry ingredients together.

  2. Add the wet ingredients and mix well.

  3. Stir in the chocolate chips.

  4. Microwave for 1.5 to 2 minutes or bake in the oven at 350°F for 23-25 minutes.

  5. Cool for 5-10 minutes, then top and enjoy.
