Vegan Cookie Mug Cake

Ingredients

  • 4 tbsp flour of choice
  • 1/2 tsp baking powder
  • 1 tbsp brown sugar
  • Pinch of salt
  • 2 tbsp natural nut or seed butter
  • 1/4 cup unsweetened dairy free milk
  • 1-2 tbsp chocolate chips

Preparation

  1. Add dry ingredients except chocolate chips to a mug.

  2. Add peanut butter and milk, then whisk together with a fork.

  3. Fold in chocolate chips and place the mixture into one or two mugs.

  4. Microwave for 1 minute and 30 seconds.

Cooking tips

  1. Note that every microwave is different; if concerned about power, microwave for 45-50 seconds first, check doneness, and add 10-second intervals until baked.

  2. Ensure there is enough space in the mug for the cake to rise.

  3. For oven baking, use an oven-safe dish and bake at 350F for 15-18 minutes.
