Vegan Cookie Mug Cake
Ingredients
- 4 tbsp flour of choice
- 1/2 tsp baking powder
- 1 tbsp brown sugar
- Pinch of salt
- 2 tbsp natural nut or seed butter
- 1/4 cup unsweetened dairy free milk
- 1-2 tbsp chocolate chips
Preparation
Add dry ingredients except chocolate chips to a mug.
Add peanut butter and milk, then whisk together with a fork.
Fold in chocolate chips and place the mixture into one or two mugs.
Microwave for 1 minute and 30 seconds.
Cooking tips
Note that every microwave is different; if concerned about power, microwave for 45-50 seconds first, check doneness, and add 10-second intervals until baked.
Ensure there is enough space in the mug for the cake to rise.
For oven baking, use an oven-safe dish and bake at 350F for 15-18 minutes.
