Tomato Egg Drop Soup

Ingredients

  • 3 cups Epic Bar Homestyle Savory Chicken Bone Broth
  • 2 roma tomatoes
  • 1 egg
  • 2 tablespoons neutral oil
  • 1 clove garlic
  • Cornstarch slurry (1 tablespoon cornstarch with 1 tablespoon water)
  • Soy sauce, to taste
  • 1/8 teaspoon white pepper
  • 1 teaspoon sesame oil
  • 1 scallion

Preparation

  1. In a bowl, beat the egg and set aside.

  2. In another bowl, make the cornstarch slurry until dissolved.

  3. In a pot, add oil and tomatoes. Cook for 3-4 minutes until tomatoes break down.

  4. Add garlic. Stir to mix and let cook for 1-2 minutes.

  5. Pour Epic Bar Homestyle Savory Chicken Bone Broth into the pot. Bring to a light boil.

  6. Stir in sesame oil and soy sauce.

  7. Mix the cornstarch slurry and pour into the pot. Stir well and allow the broth to simmer for another 1-2 minutes.

  8. Turn the heat off. Stir the broth and slowly pour in the egg.

  9. Ladle soup into bowls, season with white pepper. Garnish with scallions and serve immediately.
