Tomato Egg Drop Soup
Ingredients
- 3 cups Epic Bar Homestyle Savory Chicken Bone Broth
- 2 roma tomatoes
- 1 egg
- 2 tablespoons neutral oil
- 1 clove garlic
- Cornstarch slurry (1 tablespoon cornstarch with 1 tablespoon water)
- Soy sauce, to taste
- 1/8 teaspoon white pepper
- 1 teaspoon sesame oil
- 1 scallion
Preparation
In a bowl, beat the egg and set aside.
In another bowl, make the cornstarch slurry until dissolved.
In a pot, add oil and tomatoes. Cook for 3-4 minutes until tomatoes break down.
Add garlic. Stir to mix and let cook for 1-2 minutes.
Pour Epic Bar Homestyle Savory Chicken Bone Broth into the pot. Bring to a light boil.
Stir in sesame oil and soy sauce.
Mix the cornstarch slurry and pour into the pot. Stir well and allow the broth to simmer for another 1-2 minutes.
Turn the heat off. Stir the broth and slowly pour in the egg.
Ladle soup into bowls, season with white pepper. Garnish with scallions and serve immediately.
