Chinese Smashed Cucumber Salad

Ingredients

  • 1 cucumber
  • 1-2 tsp salt
  • 2 garlic cloves
  • 1/2 tsp sugar (or other sweetener)
  • 2 tsp sesame oil
  • 1 tbsp soy sauce
  • 1 tsp black vinegar (or rice vinegar)
  • 2 tsp chili oil
  • toasted sesame seeds

Preparation

  1. Smash the cucumber with a knife so it splits up lengthwise into 2-4 pieces. Cut into pieces.

  2. Salt the cucumber to draw out some of the moisture. Let it sit for about 10 minutes, then drain the water.

  3. Add the remaining ingredients to the bowl and combine.

  4. Serve with some homemade chili oil and toasted sesame seeds. Enjoy!

Notes

  1. This salad can be made in 5 minutes and is highly addictive.
