Smashed Cucumber and Dumpling Salad
Ingredients
- 1 large cucumber
- 12-16 frozen dumplings
- 1 tablespoon vegetable oil
- 1-2 teaspoons sesame seeds
- A large handful of fresh coriander
- 3 spring onions
- A handful of radishes
- A few chillies (optional)
Dressing
- 4 tablespoons light soy sauce
- 2 tablespoons black vinegar
- 1/2 tablespoon sesame oil
- 2 tablespoons chilli oil
- 3/4 tablespoon grated fresh ginger
- 1-2 cloves garlic, crushed
- A squeeze of honey
Preparation
Place the washed cucumber on a board, smash it with a rolling pin until cracks form, chop into roughly 1cm pieces, and remove any loose watery seeds.
Cook the chosen dumplings according to package instructions; for example, pan fry in a little oil until brown on the bottom, add 120ml of water, cover with a lid, and cook for 5 minutes until done.
Meanwhile, combine the dressing ingredients and adjust to taste. Prepare the other salad components.
Combine the cucumber, dumplings, salad ingredients, sesame seeds, and dressing, then serve and enjoy.
