Korean-Style Fried Cucumbers with Beef
Ingredients
- 4-5 cucumbers (about 500g)
- 0.5 tablespoon salt
- 150g ground beef
- 2 tablespoons soy sauce
- 1 tablespoon chopped garlic
- 0.5 tablespoon sugar
- 1 tablespoon sesame oil
- sesame seeds
Preparation
Slice the cucumbers into 2-3 mm thick rings, sprinkle with salt, mix, and let stand for 20 minutes to release excess moisture.
Add garlic, soy sauce, and sugar to the ground beef, mix, and set aside for 20 minutes to marinate.
After 20 minutes, squeeze the cucumbers well with your hands to remove excess moisture.
Heat a skillet over medium heat, add a little oil if the beef is not fatty, then add the beef and fry for 2-3 minutes until crumbly.
Add the cucumbers and stir-fry for 1 minute, stirring constantly.
Pour in the sesame oil, sprinkle with sesame seeds, mix, and remove from heat.
Tips
Let the cucumbers cool completely before serving; this can be enjoyed as a side dish or used in bibimbap.
