Chocolate Protein Loaf Cake
Ingredients
- 1/2 cup olive oil
- 1 cup sugar
- 1/4 cup cacao
- 1 cup gluten free self raising flour
- 3/4 cup vegan chocolate protein powder
- 1 cup soy protein milk
- 1 tbsp apple cider vinegar
- 1 pinch salt
- 1 1/2 tsp baking powder
- 1/3 cup chocolate chips (vegan, optional)
Topping
- 100 g dark chocolate (vegan if needed)
- 1/3 cup vegan pouring cream
Preparation
Preheat the oven to 350°F and grease a loaf pan.
In a bowl, mix together the dry ingredients including flour, protein powder, cacao, baking powder, and salt.
In another bowl, whisk the wet ingredients such as olive oil, sugar, soy protein milk, and apple cider vinegar.
Combine the wet and dry mixtures and stir until just combined, then fold in the chocolate chips if using.
Pour the batter into the prepared loaf pan and bake for 40-50 minutes or until a toothpick inserted comes out clean.
Allow the loaf to cool completely before adding the topping.
For the topping, heat the vegan pouring cream until hot and pour it over the chopped dark chocolate, stirring until smooth and melted.
Spread the topping evenly over the cooled loaf.
Tips
This loaf can be sliced and frozen for convenient snacking later.
It is perfect for meal prep and offers a nutritional boost with added protein powder.
