Creamy Orzo Bake with Pesto and Hummus
Ingredients
- 400 ml vegetable broth
- 200 g frozen peas
- 1 red onion
- 1 leek
- 1 zucchini
- 2 handfuls spinach
- 200 g orzo
- 2 generous tbsp hummus
- 2 tbsp green pesto
- Pinch of pepper and salt
Optional toppings
- Fresh basil
- Pine nuts
Preparation
Preheat the oven to 180°C.
Put all ingredients in a large oven dish and mix well. Add a splash of plant-based milk if it seems too dry.
Bake for 20-25 minutes, until the vegetables and orzo are soft and cooked.
Serve immediately and garnish with fresh basil and roasted pine nuts.
