Creamy Orzo Bake with Pesto and Hummus

Ingredients

  • 400 ml vegetable broth
  • 200 g frozen peas
  • 1 red onion
  • 1 leek
  • 1 zucchini
  • 2 handfuls spinach
  • 200 g orzo
  • 2 generous tbsp hummus
  • 2 tbsp green pesto
  • Pinch of pepper and salt

Optional toppings

  • Fresh basil
  • Pine nuts

Preparation

  1. Preheat the oven to 180°C.

  2. Put all ingredients in a large oven dish and mix well. Add a splash of plant-based milk if it seems too dry.

  3. Bake for 20-25 minutes, until the vegetables and orzo are soft and cooked.

  4. Serve immediately and garnish with fresh basil and roasted pine nuts.
