Chicken and Mushroom Tagine

Ingredients

  • 3 large chicken fillets
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 tablespoons olive oil
  • 2 cups sliced mushrooms
  • 3 cloves crushed garlic
  • 1 large onion, sliced
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 2 tablespoons lemon juice
  • 1 cup chicken broth
  • 1 cup heavy cream

Garnish

  • Chopped parsley

Preparation

  1. Position the oven rack, preheat the oven to 180°C, and prepare a large baking dish.

  2. Cut the chicken fillets into large pieces and sprinkle with salt and black pepper.

  3. Place flour in a wide plate and coat each chicken piece lightly in flour.

  4. Heat oil in a large skillet, brown the chicken pieces, and place them in the baking dish.

  5. In the same skillet, add onion and garlic, stir until fragrant, add mushrooms, stir until slightly wilted, and place over the chicken.

  6. In the same skillet, add butter and flour, stir until golden, add chicken broth while stirring with a whisk, add lemon juice and cream, stir to make a smooth sauce, and spread it over the mushrooms.

  7. Place the dish in the oven and bake for 30 minutes until golden. Serve hot.
