Whole Chicken Stuffed with Mushrooms

Ingredients

  • 2 kg whole chicken
  • 1 teaspoon salt
  • 1 teaspoon ground coriander
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 4 tablespoons melted butter
  • 1 medium chopped onion
  • 2 cloves crushed garlic
  • 2 cups chopped mushrooms
  • 1 cup toasted bread crumbs
  • 1/4 cup parsley
  • 2 egg whites

Preparation

  1. In a bowl, put salt, coriander, paprika, and black pepper. Mix to combine.

  2. Prepare a baking dish or tray. Place the chicken in the dish and spread half of the spices on the chicken, rub the chicken well with the spices inside and out.

  3. In a pot, heat half the butter, add onion and garlic, stir until wilted. Add mushrooms and stir until wilted.

  4. Add breadcrumbs and stir, add parsley and remaining spices. Add egg whites and stir to mix. Stuff the chicken with the mushroom mixture. Spread the remaining butter on the chicken.

  5. Place a piece of aluminum foil on the chicken. Put the dish in the oven at 180°C for 15 minutes. Remove the foil and let the chicken cook until fully done and browned.
