Creamy Chicken and Rice Dish
Ingredients
Chicken
- 800 grams chicken
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon saffron powder
- a pinch of red food coloring
- dried mint
- olive oil
- 1 tablespoon honey
- 1 tablespoon pomegranate molasses
- lemon juice
Rice
- 2 cups long-grain rice
- 2 tablespoons ghee
- 2 bay leaves
- 2 cloves
- salt
- black pepper
- hot water
- food coloring (optional)
Sauce
- 2 tablespoons ghee
- 1 small onion
- 1 clove garlic
- 1 tablespoon tomato sauce
- 1 tablespoon pomegranate molasses
- tomato cubes
- optional green chili
- 1 chicken stock cube
- 1 teaspoon paprika
- 1 teaspoon curry powder
- 1 teaspoon turmeric
- 1 tablespoon pomegranate molasses
- 1 cup water
- small can of clotted cream
Preparation
Chicken
Marinate the chicken with the seasoning mixture
Place the marinated chicken on butter paper and cover with foil
Bake in a hot oven for 40 minutes
Remove the foil and bake until browned
Rice
Heat ghee with bay leaves and cloves
Add washed and soaked rice and sauté briefly
Add salt, black pepper, and hot water, then cover and cook until done
Add food coloring if desired at the end
Sauce
Heat ghee and sauté onion and garlic
Add tomato sauce, pomegranate molasses, tomato cubes, optional green chili, chicken stock cube, paprika, curry powder, turmeric, pomegranate molasses, and water
Simmer the mixture
Blend the sauce and add clotted cream, cook for 2 minutes
Assembly
Serve by placing rice, chicken, and sauce on a plate
Garnish with fresh cilantro
