Chicken Fajita Rice Dish
Ingredients
- 2 cups rice
- 1 tablespoon basil
- 1 teaspoon garlic powder
- 3 tablespoons lemon juice
- 3 tablespoons olive oil
- 4 pieces chicken fillet
Chicken mixture
- 1 tablespoon finely chopped coriander
- 1 teaspoon cumin
- 1 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon chili
- 1 tablespoon oregano
Preparation
Mix the chicken mixture ingredients together to create a marinade
Coat the chicken fillets with the marinade and let sit for at least 30 minutes
Cook the rice according to package instructions, adding some olive oil if desired
Heat the remaining olive oil in a pan over medium heat
Cook the marinated chicken until fully done and golden brown
Combine the cooked rice with the basil, garlic powder, and lemon juice, then serve with the chicken
